First around the world receipe

“This simple chicken in a vibrant coconut milk sauce will fill your kitchen with the enticing aromas of ********* cooking.   It’s great served over pasta or rice.”

Receipe below makes 4 servings.

1 teaspoon ground cumin
1 teaspoon ground cayenne pepper
1 teaspoon ground turmeric
1 teaspoon ground coriander
4 skinless, boneless chicken breast halves
salt and pepper to taste
2 tablespoons olive oil
1 onion, chopped
1 tablespoon minced fresh ginger
2 jalapeno peppers, seeded and chopped
2 cloves garlic, minced
3 tomatoes, seeded and chopped
1 (14 ounce) can light coconut milk
1 bunch chopped fresh parsley

DIRECTIONS

  1. In a medium bowl, mix the cumin, cayenne pepper, turmeric, and coriander. Place the chicken in the bowl, season with salt and pepper, and rub on all sides with the spice mixture.
  2. Heat 1 tablespoon olive oil in a skillet over medium heat. Place the chicken in the skillet. Cook 10 to 15 minutes on each side, until no longer pink and juices run clear. Remove from heat and set aside.
  3. Heat the remaining olive oil in the skillet. Cook and stir the onion, ginger, jalapeno peppers, and garlic 5 minutes, or until tender. Mix in the tomatoes and continue cooking 5 to 8 minutes. Stir in the coconut milk. Serve over the chicken. Garnish with the parsley.

what is around the world

After we were blessed with our daughter Bailey, we found it hard to do the things we did before she was with us.    There was just something missing, so the idea was suggested to  me by a friend who said that her and her husband would do a international dinner night.

For them every week or so they dedicated one night where one of them would pick a country and get some take out from that type of cuisine, and bring it home for dinner.   It sounded like a good idea to help fill that hole of date night, but if you know me I always have to put a twist on things.

I decided that Bree and I could take that idea and make it a more involved process.  I then decided that Bree and I could pick a country and plan an meal from that country.  Ever other week or so, we would prepare the meal together and experience some new cuisines.  The catch was we could not tell the other person what country it was from until we were eating the finished product.  Not only was the idea exciting because we were trying new things, we would be doing it together.  Spending that quality time together that gets lost with the shuffle of being a business owner and new parents.

So there it is, Around The World date night was born.  I will post the recipies as we are able to prepare them, and I welcome you to try them with us.  Feel free to comment and review the different dishes that have been selected.
